This Palestinian version of Zahtar is a spicier version to the brown or green Zahtar.
It’s popular condiment and used to season fried and
barbecued meats. It combines the nutty taste of
sesame with sumac and dried thyme and the fiery nature of the Aleppo pepper. Similar
mixtures are reported from Lebanon and Jordan. Zahtar
is often mixed with olive oil and spread on pita bread.
