It is widely used in Thailand, Indonesia and Malaysia as a food flavoring and spice. Like ginger, galangal is a ‘de‐fisher’ and so appears frequently in fish and shellfish recipes, often with garlic, ginger, chilli and lemon or tamarind. A essential ingredient to making Tom kha Kai, the famous Thai Coconut soup.

Medicinal: It is used against nausea, flatulence, dyspep‐ sia, rheumatism, catarrh and enteritis.
